Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast or thighs, diced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 medium carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cups chicken broth (plus 1–2 cups extra if needed)
- 1 can (15 oz) diced tomatoes
- 1 cup uncooked pasta (small shells, ditalini, or orzo work well)
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 2 cups fresh spinach, chopped
- Parmesan cheese and fresh parsley for garnish
Instructions
- Cook the chicken.
Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced chicken and season lightly with salt and pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the pot and set aside. - Sauté the aromatics.
In the same pot, heat another tablespoon of olive oil. Add the onion, garlic, carrots, and celery. Cook for 5–7 minutes, stirring occasionally, until the vegetables are softened and fragrant. - Build the flavor.
Pour in the chicken broth and add the can of diced tomatoes, along with the dried basil, thyme, paprika, salt, and pepper. Stir well to combine. - Simmer the soup.
Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for 10 minutes, allowing the flavors to meld and the vegetables to cook further. - Add pasta and chicken.
Stir in the uncooked pasta and the cooked chicken. Let the soup simmer for another 8–10 minutes, or until the pasta is tender. Add additional broth if needed to maintain your desired consistency. - Add the greens.
Stir in the fresh spinach and let it wilt for 2–3 minutes. The spinach adds a vibrant color and a boost of nutrition. - Serve with love.
Ladle the soup into bowls, top with freshly grated Parmesan cheese, and garnish with chopped parsley. Serve immediately and enjoy!

The soup looks great! I always end up spending money on cans of chicken noodle soup and this is what I really should be doing… just whipping up a big batch of deliciousness!

I love homemade chicken soup but admit I have never been able to make it.
This recipe is definitely going to be something I will try. I have never thought about putting tomatoes in with my homemade chicken and noodle soup. I really like the thought of adding the spinach along with the different herbs. I can’t wait to try this recipe out.
